What Are Phages?

Bacteriophages, often referred to simply as phages, target and eliminate specific bacteria. This specificity makes bacteriophages a promising and valuable food safety intervention method compared with other broad spectrum antimicrobials. While other methods indiscriminately kill both harmful and beneficial bacteria, phages will only target harmful bacteria, such as those resistant to antibiotics, while preserving beneficial bacteria.
